Nigeria is the third largest exporter of ginger in the world after China and India. Nigeria’s produce about 110,000 metric tons predominantly from six states; Kaduna, Nasarawa, Benue, Niger and Gombe Kaduna State is the largest producer of ginger in Nigeria. Most of the dried ginger available for international trade are simply sun dried but artificial drying can be used in the rainy season. Dried ginger is usually offered in a split or sliced form. Splitting is usually preferred to improve flavor and overall quality but most of the ginger in the market are sliced because it is easier to grind.
